I like all of them. I start leaning one way then I decide I like something else "the most" then revert. We make Nut butters in our Vitamix, in like 5 minutes...

I've been liking fresh Brazilian's lately. I can't stand them in those cheap mix nut packs, but fresh organic ones from Nuts.com are to die for.

I recently started making homemade cashew butter...it's unbelievably good. I was always a peanut butter guy until I ran across Justin's Almond Butter (it's like the Nutella of the almond world, amazing stuff) and then started branching out. Super easy...dump raw (unsalted & unroasted) cashews into a food processor for a whopping 20 minutes:

For a snack, I make faux cookie dough & eat it raw...2 parts cashew butter, 1 part honey, and stir in chocolate chips. It helps if the cashew butter is microwaved for 5 or 10 seconds to make it a little warm (tastes better as a "cookie dough"). It's like healthy Tollhouse cookie dough :awe:

In an ironic twist, that recipe is on "Health Foodie", but if cashews are not processed correctly they are actually poisonous. The tree and shell of the cashew fruit (the cashew we eat is a seed, not a nut) are lousy with urushiol...the stuff that makes poison ivy the thing of campsite nightmares. The cashews have to be steamed or boiled to break the urushiol down.

Another odd fact: Brazil nuts are one of the most radioactive foods. Depending on where your Brasil nuts come from, they may be a bit radioactive. Brasil nut trees are HUGE, with extensive root systems. These systems go deep underground, and trees growing in areas that are rich in uranium, thorium, or radium tend to suck up those radioactive elements and pass them on to the nuts.

Cashews are pretty on point, but I'm also partial to pecans. They're so easy to get down here.
