Alice in Chains & Clapton Unplugged, Phish's A Live One, Van Halen's Live, Right Here, Right Now

The Unplugged series actually isn't mastered horribly, surprising since phlegMTV had a hand in them.

i really prefer live over studio recordings. among my favorites:

the who - live at leeds (the eleventeenth version, remastered with full set list)
led zeppelin - bbc sessions
10000 maniacs - unplugged
alanis morrisette - unplugged
tony bennett - unplugged
nirvana - unplugged
frank sinatra - sinatra at the sands
jimmy page and the black crowes - live at the greek
dave matthews band - live at red rocks
woodstock - soundtrack (i wish all of the material was made available)
pearl jam - SF 10/31/2000
dave matthews & tim reynolds - live at luther college
led zeppelin - how the west was won

and of course, stacks of grateful dead and dmb soundboards :)

Dave Matthews & Tim Reynolds: Live @ Radio City Music Hall (Luther College was awesome, too)
Dave Matthews Band: Live in Chicago
