-edit- oh and another thing. According to many master tasters I've spoken with aging longer does not equal better flavor. The reason why they age scotch for so long is to get the dang peat taste out of it (wood is a filter).

No. Peat tastes like ass. They're trying to leave the smoother flavors and take out the "peat" taste.
Do talk to a master distiller about aging bourbon. In fact aging it longer does more harm than good. Its mainly marketing.
