What's with muffins these days?

There's something that's really bothering me about muffins these days...

Why do the muffins break apart so easily? (I'm talking about Tim Hortons muffins specifically, but I assume it's the same with every other doughnut/coffee shop).

The muffins when I was a kid always had big glorious tops and a bottom that you could rip in half with your hands and butter without the thing crumbling into pieces.

I just bought a chocolate chip muffin and it fell apart while pulling off the wrapper around the bottom! I can't even begin to describe what an exercise in futility it was trying to butter the crumbs that ended up in my hands...

Not necessarily, but they all probably *are* lower fat than they were "when you were a kid." Assuming that wasn't within a year or two.

That said, I can't ever recall a time when muffins weren't crumbly.

muffins are supposed to be a tad on the crumbly side, and not too sweet.

if its sweet and holds together well...its a cupcake, even if they call it a muffin.

its lack of moisture disturbs me.

why not try making your own muffins?

Quaker has some great muffin mixes. Double chocolate is simply awesome.

Annie Mae Jones' Cornmeal Muffins Recipe
Ingredients
2 cup cornmeal,sifted*
3/4 tsp baking soda
1/2 tsp salt
1 egg
1 1/2 cup buttermilk
1 1/2 tbsp lard or vegetable shortening
1 1/2 tbsp butter


Directions
1. Preheat oven to 400'F.

2. Grease 2 6-cup muffin tins with vegetable shortening or lard.
Place in oven to heat.

3. Sift cornmeal, soda, and salt into a mixing bowl.

4. Beat egg with buttermilk. Heat shortening with butter until
melted; add to egg and buttermilk and blend. Add to dry ingredients
all at once and stir just enough to give the mixture a rough
appearance. Add additional buttermilk if mixture seems too dry.

5. Pour into hot muffin pans and bake about 20 minutes, or until
lightly browned. Serve hot with plentyof soft butter and any homemade
jelly or jam.
