What's the word for the guy that burns dead bodies?

It's a mortician.

People who run mortuaries are morticians. Morticians dispose of dead bodies, either by fire or by burying them.

Crematorium technicians/operators is correct. A crematory is a service, and place that can be found at some cemeteries. In the old days these were huge vault like chambers, aprox.
6'x 6' x 8', the pilot light was nearly 10" high. The coffin, and all the flowers from the funeral were burned. After cool down, we would step inside and sweep the remains into a small cardboard box, and deliver it to the family. I must say, that over the years we have gotten far more efficient, indeed, even high tech, Gore would be proud  .

<----- Father recently celebrated 65yrs. in his funeral home business. (we lived upstairs)
