Whats the max memory an Opteron/A64 can use?

32bit = about 4 Gigs
64bit = about 16.7 Billion Gigs, I think?

But can the Opteron/A64 use all that (I know there arent any boards, just theoretically)

Yep, the theoretical max is 16.7TB of RAM for 64 bit architecture...

The practical limit for most motherboards it 16GB though, since they don't make DRAM in larger capacities.
