on a related note, i was hunting for a super-automatic espresso machine on ebay, hoping to find a deal. i came across this Jura Capressa XT. i was greedily hoping it'd stay low, but it's out of my budget :) although it's a pretty good price right now (retails over a thousand dollars, i believe.....not my auction of course).

i'll have to make due with my trusty Saeco Espresso Classico :)

Check this one out. The lighting came out yellow, but you can still see how the shot came out. It was 100% crema all the way through, and it persisted long enough for me to get two sips of 100% crema; unbelievably effervescent Ethiopian Harrar goodness.

This is what it looked like after a few sips.

Kolache shop here sells a tall espresso, no milk for $2. It is 4 shots in one giant cup that makes you feel ripped off as it doesnt even fill a 1/4 of the cup.. Excellent deal and definitely not good to drive with after you have had a few.

Yes, beyond a certain threshold the caffeine will indeed leave a bitter note; however, as with wine, the presence of one component balances the other. Some wines are exceedingly alcoholic, acetic, or something else if not properly decanted, for example. A proper espresso will indeed have bitter components, and admittedly those not quite acclimated to the diverse sensory experience might first comment that it's bitter; however, further investigation will allow the sweet (in the form of berries, dried fruit, etc.) to become manifest. In fact, the only time I ever notice anything bitter is when I detect a dark chocolate finish.

That said, sometimes I mess up my roast, my shots, or any of the other many variables that come together in ephemeral confluence to produce such gustatory perfection. Perhaps I should not have said "no bitter components."

There is a wonderful world of coffee out there, and espresso is only part of it. Just today I've had an espresso brewed from Sumatran beans, Indian beans, and Mexican beans. You really get a sense of what the French would call terroir (wine nerds will know what I mean); a true expression of the growing region, it's processing methods, etc. Anyway, I suggest you delve further if you have any interest.

I'm going to go pull a triple right now, got a bottomless portafilter with a LM triple basket. A properly made espresso should taste very nice, not bitter nor sour. I'm not going to get into the whole thing right now, but it's awsome :D

There's only one word that describes the experience with appropriate lucidity: Ethereal. Yes? :D

There's only one thing better than a double ristretto: A triple. Beyond that the only thing better is to go naked , so you're all set it seems. I'm spoutless as you can see from my picture above, but I've yet to go naked; what's wrong with me?

Hope the I-Roast is treating you well :D I just roasted another batch of Sumatra Mandheling that I bought a while back.

I had a friend from Cuba that showed me how espresso was supposed to be drank.

A LOT OF SUGAR and a LOT of CREAM.

(The way he made it, it really wasn't half bad. Though normally, I drink my coffee strong and black. No sugar)

I roasted some puro scuro blend from SM's 4 days ago in the iroast, very good stuff. You really should get that naked portafilter, it's really showed me the flaws in my tamping and helped me make great improvements. Not to mention it's really cool to watch :)
