what's the best way to freeze fish?

any tips? I've started to eat a lot of fish lately, but fish is kinda one of those things that has to be eaten relatively fresh -- I pretty much always cook it the same day I buy it and eat it within a day or two.

my problem comes from the fact that I've started doing my meat shopping at whole foods... they've got a significantly better selection than my local grocery store, but they're also about half an hour drive away, which means I only really want to be making the trip once a week at most (every other week would probably be ideal). but what's the best way to store the fish so that it stays somewhat fresh and available for cooking throughout the week?

If it's fresh fish that were never previously frozen, you can use the Reynolds hand vac and the quarter-size bags on them. Otherwise, find frozen fish from a brand that you like and take out what you need for the evening. Takes about 15 minutes to thaw in cold water.

FoodSavers are awesome! I love the one that I have! I do a lot of shopping at Whole Foods as well and I get their BIG package of chicken breasts. I split them up into 2 or 3 per bag and let 'er rip! I also have some of the canisters for other things.

Never tried it with store bought fish, but I put it in an ice cream bucket or ziplock bags, fill it with water and freeze it.

here at the lab, we tricaine our fish until they are fully anesthetized, then we put them in icey water, then store them in the -20 freezer.
