I need a program that will monitor my new video card's temps. It's a factory overclocked Gigabyte 8800GT 512MB that came with a Zalman cooler, so wondering what my temps are at full load, including my memory chips. Not looking to overclock any further, just want to know how hot they run at full load. Which program does this the best?

Rivatuner would be best, they have an overlay where you can monitor temps in-game, much like Fraps with FPS.

I use both speed fan and Riva, and when I had ATI ATI tool (what a great app that is). Riva will take some time to get fan profiles down pat but it's doable, and at the same time temps are accurately monitored. However. I simply don't like having to constantly monitor GPU temps while gaming -- so a Zalman took care of that with my 7950GT and I would think the VF700alcu on your gigabyte does the same, but yeah be sure to make sure with the most intense games it's not more than 60-65c load ever with that cooler. Mine is usually around 55c max load with the VF700alcu.
