What's the best headphones to use for gaming?

Depends what you want really.

A few types:
In ear (typically use these with walkmans)
Over ear, open back - these sit on your ears but have an open back (which lets a little sound out)
Over ear, closed back - these sit on your ears but dont let any sound out (into the room) since they have closed backs.

It really depends what sort you find comfortable..

sennheiser 497's, no question. open headphones have better sound. go to head-fi.org and headphone.com for info.

I prefer real headphones to somthing that needs a gimick to sell (*cough*zalman*cough*). I wouldn't trade my Sennheiser 497s for anything 🙂 (Except Sennheriser 600s with an amp...but thats not going to happen 🙂 )

what about something that dont touch your ears but fit all the way around them, with noise cancelling, and mic

Of course, if you have money burning your pockets out, you could get the Bose Noise Cancelling headset. Since they announced version 2, the version 1 set is on sale at their site for only $199. 😉

ouch hah, u'd have to pay out ur ass for the bose sadly. and that has no mic. and doesn't sound that great either. noise canceling works for engine hum, not normal noise. the sennheiser 590's don't touch your ears, very comfy. no noise cancling, but err as i said...

and mic? justget a separate one.

Zalman surrounds. They sound like 4-channel speakers.

I was thinking about purchasing them, but I don't know if I want headphones from a company that makes cooling devices and PSUs.

I'd like to see other quality manufacturers make a multichannel pair though.
