I can't really answer your question, as Freespace 2 is the only game of that genre I've played, but its really good (I think most people agree). You should try it.

Easy is actually somewhat challenging, medium is enough for me. On hard I kept getting about 75% of the way through missions before getting blown out of the sky. To play the mods like "Freespace Port" use the fsopen "Launcher.exe" installed in the base directory. Do "Select Mod", then select the "fsport" folder in the base install directory. That will even change the startup movie so you'll get the complete storyline.
