gf is making stuffed chicken breasts. she stuffs them with peppers, onions, mushrooms, cheese, and other stuff. usually have that with a stuffed baked potato, and salad.

I just made a HUGE pot of awesome chilli!! And I have some leftover meatloaf.. so it is chilli and meatloaf sandwhiches for dinner ... supper...here

Its a pretty simple recipe really. as I've seen her make it before several times. She starts with a couple large boneless chicken breasts, which she pounds flat over a saran wrap. She then throws peppers, cheese, onions, calantro, sometimes chopped bacon, and seasoning, then she wraps them together, rolls them up, sticks in a toothpic then browns them on a skillet over very high heat to sear the outside. They then go in the oven for about 30 minutes or so. She normally crams so much fixin's inside a single chicken breast that one is about enough to fill you up if you have a side with it.
