Crispy tofu with broccoli and quinoa. While it's cooking I'm eating some beef jerky made with Carolina reaper peppers.

Isn't that just called "minced beef"?
In the US it's typically called hamburger meat or ground beef. Apparently "Down East" is the easternmost portion of coastal Maine. I've got a friend who is a chef and he moved up to New Hampshire and was told to make chop suey which seems to have a totally different meaning up there. New England is a little different. :p

Made vegan potato leek soup in the crock pot a couple of days ago; had some of that with rice and beans. Coconut milk does wonders for vegan foods when you want creamy, but keep an eye on the saturated fat.

I'm an omnivore, and I like soups made with proper boiled bone stock better, but given the environmental and population concerns these days, I'm trying to cut down on animal products.
