Don't wait a year. It's hard to go back to school once you get out completely.
I'd say, if and when UT Austin rejects you, they'll offer to accept you in your sophomore year if you go to another of the UT schools and make a 3.0. I'd say, go to UT Arlington (in between Fort Worth and Dallas) and do that if your heart is set on UT. I really would encourage you to NOT go to any A&M schools.
While I don't know your personality, both Texas Tech and Southwest Texas (now renamed Texas state at San Marcos) are also good schools.
I would apply to Texas State at San Marcos if I would you. You're in close proximity to Austin. It's also a decent school, and the people there are equally open minded as those in Austin, in direct contrast to the A&M schools. Texas Tech is academically about the same, but it's much farther from Kileen, and you are in the middle of NO WHERE. You'll appreciate being close to 35, to Austin, and to home if you go to Texas State. However, both SWT and Texas Tech are big party schools. It all depends on your personality IMO.
If you would rather not be associated with a party school, to go UT Arlington and try your best to make a 3.0. You will be admitted to UT into liberal arts or natural sciences if you do.
If you would rather make the most of a second-tier school, go to Texas State or Texas Tech. But if you aren't a big partier, that might be bad for you.
Alternatively, UT Dallas is an option. However, you can't feed from UTD to UT Austin if I recall correctly. However, if you are not a big partier, you will be more at home at UT Dallas than either UTArligton, Texas State or Texas Tech. UT Dallas also has student apartments and not just dorms.
Judging from your profile and your sig, I'd say you tend to range more of with the geeks at LAN parties than with the mindless partying at keggers at SWT and Tech.

EDIT: Yes, I know I generalized a lot in this post. Sorry to any SWT/Tech/UTA/UTD people I may have offended. However I think it's a pretty accurate generalization to the majority of people at those schools. You are free to disagree here but I will not apologize for generalizing, and this thread is about an overview and not specifics.
