Been eating there for 15 years, simply the best.
I work in downtown, some good places are the Corner Bakery (7th/Fig), The Standard has a rockin rooftop bar and their burger isn't bad either (restaurant is near the lobby). JJ's on Sixth/Main is also a great sandwich shop with a nice vibe.
Roy's on 7th/fig (across from Corner Bakery is pretty decent), La Parrilla about 3 lights west of the 110 on wilshire is probably the best mexican, Nic and Stef's is a decent steakhouse (Flower/4th), but doesn't hold a candle to Morton's (7th/fig).
For seafood, bar none the Water Grill (6th/grand?), Patina at disney hall is very high end but good. R23 has some good sushi.
There is no in n out, but the original Tommy's is on Bevery and Rampart about 5 minutes west of the 110 on Beverly (that is the original stand first one opened). There is this hole in the wall sushi place in Skid Row that you pretty much can't go to unless it's daytime cause the homeless are just crazy most times.
Zita Trattoria for Italian easily, and pitfire pizza for pizza (cpk has NOTHING on this place), although they really specialize only in thin crust stuff, it's awesome.
