What's a decent sauce I can use in combination with baby carrots?

This. Baby carrots are nice to toss in a stew if you don't feel like peeling and chopping some up. If you do it right and use a crock pot you can make it so quickly it will take longer to do the dishes than to prepare the stew.
 
I think carrots get too sweet if glazed with anything based on honey or brown sugar. The sweetness of the carrots themselves is enough, so I like the sauce to be savory instead of sweet. Like so many others, I prefer a brown gravy made from the meat drippings and spices like you'd use in a pot roast or stew.
