What would you say is the FUNDAMENTAL distinction between Pop and Rock?

I would say that Pop would encompass some of Rock. "Popular" rock music would fall under pop. Isn't that why the category of "Pop" music was made? For popular music of all genres?
 
Normally at music shops in the UK, Po & Rock is one section of the CD listings, so they're together.
Personally I wouldn't say there's much between them as there's so much crossover.
Obviously not all pop is rock and not all rock is popular, but there's a lot of crossover.

The distinction is clear to me.

You can't drink soda rock, and there's no such thing as a Mom and Rock store or nursery rhyme called Rock Goes the Weasel.

On the other hand, there's no Pop of Gibraltar or pro wrestler turned mediocre actor called The Pop, and no girl will ever admire your pop hard abs.

In music, if I had to use one word to distinguish the two, it would be "grit".
