What would be better for gaming and overall?

The 3500+ with the x850xt would be better, but I would suggest you get the 3700+ with an X800XL and wait for the release of the 32 pipe next gen cards (or the 24's if you don't want to wait.)

Don't listen to the fanboys. The X850XT is generally faster than the 6800GT. However, if you can wait a few weeks, you will be better off with the new 7800 or the R520.
