Baked the first batch of bread (white sandwich) in my new 13" Pullman pan yesterday. Did turkey, stuffing, potatoes on Christmas. Not counting grilled cheese yesterday as something from scratch :p

Either doing spaghetti (sauce & meatballs from scratch) or a roast/potatoes/asparagus on NYE. Probably frozen pizza tonight though ;)

last night: kale with left over chicken, mushrooms mixed in.

for next week i have a fresh cow tongue in the fridge!

BBQ chicken. lil rudeguy likes dark meat, so I tried the boneless chicken thighs from the store. FUCKING NASTY!

I threw away 3 pounds of chicken.

Today is my Sunday, so I'll make tacos for dinner. Those are always yummy and delicious.

I love chicken thighs!

Spaghetti squash, I also sprinkled some of that macaroni and cheese powder on it when it was done, it wasn't too bad.

how'd you cook it?

I love chicken thighs, but it's definitely a different taste than breast meat..

I usually buy whatever cut of chicken is on sale and figure out what to do with it later (although, it usually tends to be thighs = shredded chicken and pasta or burritos, breasts = grilled chicken sandwiches)

Last night was a pressed cuban sandwich since the wife was out of town visiting family. She doesn't care for them but it's one of my favorites so I took advantage of the bachelor time. Today she'll be back with her brother in tow so it'll be duck breast drizzled with a pomegranate gastrique, a creamy lemon-spinach risotto, and caesar salad (homemade croutons and dressing).

Thighs can actually be good, but you have to get bone-in. Boneless tends to turn rubbery if you cook it too fast. You can use boneless cubed in casseroles with good success though.

tbh, if I'm eating something where the chicken is the "center" of the dish (eg: chicken parm, grilled chicken sandwich), I'd rather have white meat.

but for stuff where the chicken is blended into the dish (stews, shredded chicken tacos, etc) I go with thighs.

I don't think I'd just grill up a couple thighs and serve it with gravy like I might with a breast, though.

dry rub on thighs then grill and call it a day

my problem with breasts is that they are only good the first day. As soon as you put chicken breast in a microwave it's dead to me.

that's fair.

I'd do hot chicken on day 1, and the next day either cold/luke warm or make chicken salad (or grilled chicken salad).

I was lazy so...
Tortilla
some salsa from a can (fire roasted +"hot")
mozzarella
dried Oregano
5 yr cheddar
dried cilantro
smoked cheddar

Would have been better using my pizza stone because of all the moisture, but that would go against lazy.

Also chicken thighs are much better than chicken breasts even when they are boneless.

Did Cajun style scrambled eggs yesterday morning. Just a Cajun spice blend, couple of eggs, and 35% cream. I'm still eating leftovers from xmas dinner.

Seasoned ground pork in a whiskey cream sauce over pasta. Don't really have a recipe, I just kind of wing it at this point.

Whenever I cook a whole chicken I eat all of the dark meat and refrigerate the breasts for sandwiches or just snack on the meat cold.

Made a Szechuan Chicken Stir Fry tonight that I've been making for almost 20 years now. Good stuff:

2 Chicken breasts, sliced into thin strips
2 broccoli crowns - diced
1 red bell pepper - diced
Handful of snow peas
1/2 cup unsalted peanuts
House of Tsang Szechuan Stir Fry Sauce (to taste)
1-3 dried arbol chile peppers (optional - really kick up the heat)
1/4 cup water
1-2 tbsp cooking oil
pinch or two of cornstarch


Stir fry chicken in oil until done. Drain oil. Add remaining ingredients to wok/skillet, cover, and cook on medium to high heat until veggies reach a desired consistency. Serve with white rice.

Note: If you choose to add the peppers, decide in advance how hot you want the food to be and seed the peppers appropriately. More seeds = more heat. And once they are in the food, you ain't getting the spice out.

Oooh I need to add peanuts next time I stir fry. I always scramble 4-5 eggs. What does the corn starch do?
