What type of brand and type of paper would you use for an All in One printer?

Vague question-----paper for what use?

At least on my Canons you generally want to use 20# bond for general printing. Some printers can use lighter----some printers can use far heavier----see your user manual.---but in general a 20# bond paper will work in all-----and the cheaper the better cost wise.---although a coated paper can help reduce ink diffusion which allows one color bleeding into another.

In terms of paper for photoprints thats a whole different subject because the photopaper may or may not match the ink used.

As you didn't offer much detail, here are my generic recommendations for inkjet printing.

For everyday use, 20lb multi-purpose is fine. For more important printing, 24lb bright white inkjet paper is good. Brand is generally irrelevant. For better quality graphics printing for presentations, I use Kodak Presentation Plus coated paper.
. For photo printing, I've found that Staples Photo Plus Gloss works great with my Canon printer and SwiftInk.com inks - on sale this week for $4. for 30 letter size sheets.
