chicken Parmesan served over spaghetti noodles, sauced poured over both. Sourdough bread baked and served alongside. Might not need a side dish, since you'll have the chicken breast and spaghetti.

I'd make it with a slightly sweet and seasoned sauce (plain tomato sauce flavored how you want).
Since time is limited, I doubt you can make your own sauce from all fresh ingredients, as usually a sauce would simmer for a day or two. So you can just take a shortcut like I described above.

Maybe a white wine to accompany?
