E6600 and ASUS P5N32-E.

Do I want DDR2 800 or 1066? I would like to o/c this cpu, which I assume is done via the fsb?

PC6400 should be fine assuming your max FSB OC target is 500 or less. You'll have to loosen timings at that point however. At 450 or less you'll probably be able to get away with the stated timings (usually 4-4-4-12) with just a bump in voltage.

Alternatively you can spend a LOT more money and get the PC8500 which will allow you to run tighter than stated timings at the same speeds just discussed.

Personally, I think the PC6400 is good enough.
