What sides go well with Salmon?

I'm making dinner for a girl, and while I'm not a very good cook, I know how to make this salmon dish pretty well. My only question is what side dishes go well with salmon? Something easy to make please, I'm a total noob when it comes to cooking.

Green beans and rice. You can make a simple but elegant sauce with red thai curry paste and coconut milk. You mix about a teaspoon of paste with enough coconut milk to cover the bottom of the pan you fried the fish in. Then drizzle it over the beans and salmon.

rice

in a pot add 1 cup of rice and 2 cups of water, bring to boil then turn the burner down to low, cover the pot, and let it simmer for 20 minutes. after 20 minutes, turn off the burner and take off the cover and you have cooked white rice ready for impressing your date.

i usually make garlic mashed potatoes and asparagus (sprinkle with little bit of olive oil, salt, pepper, and paprika...in the oven at 400 for 10-15 mins)

rice pilaf or wild rice combo. garlic mashed potatos, as well. steamed Carrot and broccoli mix.

The best is pesto orzo. Just cook up some orzo and when done mix with pesto and fresh grated hard cheese like parmesan and finish with some butter. The taste and texture with the salmon is really incredible. I rarely eat salmon without it.

Rice with saffron or some steamed vegtables.


I like to do a balsamic reduction and pour that over LIGHTLY steamed veggies that are fresh. Keeps all the nutrients and tastes great too!!

My wife like to put the balsamic reduction over the salmon itself but I feel thats sacrilegious so I usually make fun of her.


Also try some couscous with some lemon as its about to be eaten. Another great side is what I call homeless potatoes. Take a bunch of tin foil. Put a bunch of of cubed tats in there. Add random spices and veggie pieces and pour some olive oil over the top. Crinkle it up and cook it on the grill or put it under the hood of your car if your taking a trip for a few hours. You can actually cook the salmon in there too if your truly homeless.

Ive been throwing diced onions tomatoes and peppers into the olive oil/fish juices for the last half of cooking it (3 or 4 minutes).

I love salmon and eat it at least twice per week. Rice works well (salmon is loaded with protein, so throw some carbs in there) or any other kind of pasta. Hell, add some wholegrain linguini in a light olive oil sauce, and you just might live forever.

For almost all of those make sure the girl isn't on some low carb diet or anything.
Could end badly if she is. :p

Steamed asparagus, sauteed in garlic right before serving. I like couscous with garlic and pine nuts as a side as well.

I came in here to post "rice and green bean" and was amazed that apparently, others find the combination to be quite pleasant with salmon.

green beans, mashed topatoes.

i tried an awesome peach jalapeno sauce on salmon the other day. canned peach whole with syrup mixed with jalapeno and that brine that it sits in. was excellent
