What should I get for a new bed

I'm moving and decided not to take my old bed with me, so I need a new bed.
I'll be moving to Dallas if that is any help.
I have a king size oak high sided bed frame that I want to put the matress in.
So ATOT, what is worth sleeping on?

I've heard both good and bad things about visco-elastic bedding. Mainly I've been told that they are very hot becuase the dense foam holds the heat aginst you.
 
I'm looking to replace an older worn-out mattress. Too many choices. I like the concept of memory foam, but I don't know if it will be too soft or too hot. The sleep number beds look great, but are expensive and I don't like the idea of mechanical parts to keep the mattress working.

Aside from that, it's hard to know what you'll like when you only lay on one for 5 minutes in a store.
