I just got my first job at some place doing small time office work, but now there's this opening for a computer engineering internship that I so desperately want to do...it'd be a great opportunity and experience
but...
if i quit now, my resume would look bad.....
what's a "decent" amount of time to stick with my job before i can leave and venture elsewhere?

Do computer engineering. Just don't put the office job on your resume. You couldn't figure this out on your own? :D

so you are worried about leaving a job doing small time office work, to take an internship related to computer engineering. Hmmmm one question.... what would look better on the resume:

A. shuffled papers, made copies, etc, etc.

B. Computer engineering internship.

Are you in school for computer engineering? If not, maybe you better stay at the office job.

Like d1abolic said. Your resume is not a rap sheet, it's a marketing tool for your use. Go for it. If nothing else, it's what you really want to do.
