I want to capture video from 8mm and vhs-c camcorders. I have a video capture card. I'm new at this but I'm guessing that it would be best to capture at as close to their native resolution as possible. However, I can't find out what that is. Various websites list 8mm as everything from 200 lines of resolution to 325. Thanks.

What will the captured material be used for? If you are going to burn a video CD, then you might go for mpeg1 352x240. If you want to edit it first, go for a higher resolution.

IIRC 8mm is 270 lines and Hi8 is 400 lines.

Try capturing at 240 lines (320x240). If you are going to edit, I would recommend using huffyuv codec and a large hardrive(s) and then encoding into your final format for the highest quality and easy edits.
