Unless a game properly adjusts FOV for 21:9, you're not really getting more peripheral input. Many games I've played just crop the top and bottom. The same was true of games during the switch to 16:9 displays (and a long time after). It took a long time for most developers to adapt to the FOV of 16:9, but some still artificially restrict it in order to increase "teh jumpscares" (RE7).

Many new games still have to be modified via config file or startup commands.
 
Depends on the game. For modern stuff, 1080p. For older stuff I'll sometimes run at lower resolutions (720p maybe) so the low texture resolution and poly counts don't stand out as much.
