What program for ATI card fan speeds, like RivaTuner but for ATI.... ??

I have an ATI FireGL V7700 I want to turn up the fan speeds and monitor the temp with Real Temp plugin.

Have you looked at MSI Afterburner? Don't know if it will work with the FireGL series cards, but it certainly wouldn't hurt to give it a try.

Maybe ATI Tray Tools?

I have it installed in my PC at home, but have never actually used it yet, but as far as I remember it has similar features to RivaTuner. Fan control is listed in its features. Link.

Catalyst Control Centre has fan and overclock control (at least the older version I still use). No idea about realtime temp monitor though.

So, I tried ATI Tray and MSI afterburner.

I uninstalled ATI Tray after messing around and not even finding the fan speed control. It's all driver mods...... and they try to get you to install AOL toolbar (not cool, IMO).

After 2 seconds with MSI afterburner I knew that it was what I wanted. It has sliders for the main overclocking settings and fan speed, plus ability to mod the fan speed table. It's got awesome graphs of the temp, fan speed, etc. with a nice little mouse-hovering tool. Plus it looks pro.
