Most of the #1s at the places I go to have everything on it.. flank, tripe, meatballs, brisket, etc. It's all I ever get.

If by intestine you mean tripe, you are mistaken.

I normally get the pho dac biet. Pho Tai is always a safe way to go though.. for the first time. Then you generally want to get more adventurous. I'm vietnamese though, so if you read the description of what's in the pho dac biet and it makes you cringe, then don't get it :)

I usually throw fish sauce, sriracha sauce, bean sprouts, some mint, and lime into my bowl. Nothing else. Keep the hoisin and hot sauce to the side.

I'd suggest also trying banh cuon if they have it (generally under appetizers).

Also, if you order some stuff and they give you a bunch of stuff on the side, don't be afraid to ask your waiter how to eat it. You want everything to taste right so you can enjoy the greatness that is vietnamese food.. hehe

fish sauce into the broth instead of hoison/siracha? interesting....

i know the "purist" way is with hoisin/siracha on the side, but it's so goddamn good.

Hahaha, I knew that the first reply had to be "#1 combo." I enter the thread, and wasn't disapointed :D

Hehehe, the pho wars in LA county are hilarious. In Korea-town, there's a number of pho places and they always try to one-up on each other. I saw a pho2000. Across the street, a pho4000 opened. A few blocks down right near the 10 freeway, there's a "What the Pho?" resturaunt. I'm not kidding.

I love LA. Best food in the world.

Pho 2000 is garbage. Pho LA is extreme garbage. Pho 4000 is acceptable given it's location (ie not SGV/Little Saigon).

The proper formula for success is vietnamese owners, vietnamese wait staff, hispanic cooks and help. :)

Beef pho would be most authentic. my mom always made it with sliced raw beef that would be cooked in the hot broth of the soup at serving time. so get the one that comes with raw beef that gets cooked in your bowl. don't forget the cinnamon basil, bean sprouts, siracha and /or black bean sauce!

ps. for all you philly people: Pho 75 = sex

There is no wrong way to eat pho. You do it how you like it. That's just how I grew up eating it. I took my friends out to eat pho years ago and I never exactly told them how to add stuff cuz I just wanted them to enjoy it as they saw fit. So now, some of them eat it the same way I do, some of them add hoisin/sriracha in, some of them add tons of sriracha in until they start sweating.

It's great :)

Since I'm Vietnamese, lemme tell you what you should do:

If it's your first time, order Pho Tai. It just comes with rare steak, but ask them to keep the rare steak on the side. That way, just before each bite, you put it in the broth just enough to cook it a little, & have it a little rare. It's delicious that way. However, if you let the broth get too cool, it won't cook the meat at all, so there is some eating techniques involved so that you keep the broth hot for the longest amount of time. We'll let you figure that out.

Then you also order "hanh yum," which is pickled onions on the side. This won't be on the menu, but any Vietnamese Pho place should have it. When you get it, you put Saracha hot sauce on it & stir it.

Put a good helping of Hoisin sauce & lemon in the broth & stir.

So each bite should have noodles, broth, rare steak, & picked onions = win!

Yes i meant tripe...which i guess is stomach. My gf always gets the pho special while i always get the pho tai. And always keep the hoison and sriracha sauce on the side. I usually forget the sriracha sauce and get the satay if they have it.

What most people usually get is whats called the little tai. its basically just rare shank steak in hot soup.

Oh, the red sauce and the purple sauce is good in the soup, however some people dont like that purple sauce. :\

Dont know what more i can say, im not vietnamese. But i do eat pho a lot.

Spring rolls are also uber yummy. The while clear flour paper wraped around a shrimp and veggies. :T

Its very popular in Los Angeles.

Ahhh i think i'll go eat it for lunch now.

The proper term is rooster sauce! :D

Hoison sauce is AWESOME (purple sauec)... I put in like half a cup of of it in my pho (yes I do love it... greatly). Add some sriracha sauce (the red sauce), and it tastes a bit spicy and salty :).

It's Hoisin sauce.

I did get the mixed beef, meatballs, tripe, tendon, flank and brisket.

Pretty good, and I watched the asian patrons and added stuff the way they did.

It was fantastic. I'm totally a convert and will add Pho to my lunch rotation.

Yum.

oops :(

I dropped out of VN school after like 4 years. I can't read/write for shit but I can speak it pretty damn well; it's not like I need to look at a menu when I go to a pho establishment lol
