For me it'd be French Cuisine.

Much like most people living in the CONUS I'm exposed to all sorts of international cuisine (that may have been altered to suit our [some might say bland] tastes, but I digress); Mexican, Italian, Chinese, Japanese, etc. And admittedly, there are some French Restaurants strewn about but they are prohibitively expensive and snobby.

So I have a two-fold question; what kind of food can I expect if I were to be invited to the average French family's house for supper? I'm assuming that it wouldn't be the same kind of food that the French Restaurants around here serve.

And - more related to the thread title here: what kinda of national cuisine have you wanted to try (not just to say "I've had that once", but to legitimately explore) but never had the opportunity to?

French here too, as well as Russian. I know Africa isn't a country but I have only been to one African restaurant and would like to try more.

You need to look for a French place that serves more country French food, I dated a French woman and they have a lot of sauces and soups, one of the jokes about French food is that during the lean years, the cuts of meat were so bad, they developed so many sauces etc to cover up the bad meat.

She used that heavy French cookware that behaved like a pressure cooker, made veggies cook very fast and made some very good soups, etc...

Ethopian food has always interested me, I thought they had no food in Ethopia :D

Also, here in LA, one of the buzzwords is "fusion" where multi ethnic foods are combined, Mexican and Filipino are popular mixes for fusion food...

I've tried pretty much everything I can have available to me, although I'm not sure how good or authentic it was.

I had many discussions with old GF about "French Toast" & other foods we label as French that she'd never heard of and couldn't understand why we'd attribute a French origin to the food :)
