What legal recourse does one have...

Lets say I was wearing a fur down park avenue in NY and some stupid peta hippy throws paint on my fur coat, what could I do in response to this? (Legally speaking) Are they allowed to do this? Would this be assault? What would this be?

I'd say go get some paint and throw it at them lol

But I'm sure you could consider it assault, and if you wanted to spend the money to take it to a court, you could get the judge to award you damages on the fur coat, but then you'd be paying for the court fees which would probably amount to the price of the fur anyway.

You're allowed to shoot them.

In some states, FL, AK, TX and a few others, yes. (You don't know it's paint right? It could be anthrax for all you know!) I don't think they have that pre-emptive self defense thing in NY right now. But I do believe in NY you're allowed to chase their pansy asses down and put a hurt on them.

I don't know New York laws, but I'm certain that they a small claims court and the legal fees to file a claim are not too prohibitive. Wiith either a small claims action, or with a lawyer, the legal expenses are added to the amount of any reward. In Oklahoma, the maximum amount of a small claims suit is $4500, so it might not cover the cost of the coat.
