What kind of rice do they use in chinese cooking?

Specifically for something like fried rice or steamed white rice. We normally use Jasmine rice at my house. So what do Chinese people or restaurants in the U.S. use?
 
I think you want a short grain white rice, but I'll defer to those more knowledgeable. Personally, I use whatever rice I have on hand. I'm not picky, and it's all good.
 
Chinese people often use Calrose rice, it's a shorter grain than jasmine which makes it a little stickier

Odd, all of the chinese resturants I eat at use long grain rice, so it must be different where you people are. Google also shows long grain is the main rice in China.

it varies. some chinese people like long grain, some like short grain. we eat long grain rice (jasmine) exclusively. in any case long grain is better for fried rice because it's less likely to clump up.
 
Short grain rice tends to be stickier and used more often in Japanese cooking. The Chinese do use it to for some things I think but it's long grain rice for almost everything.

yea most long, only very regional use stickier varieties. standard is long.
 
go to asian super market and you will find it. you dont even have to read... jus grab randomly of one of those big bag and put it on your shoulder and go check out.

no, there isn't. it's just that i never really liked the picture. and i'm not willing to spend the money for new headshots. i'll just deal with it until i can't stand it anymore.
