What kind of rice do they use in chinese cooking?

wouldn't you just get chinese rice?

Aside from being white and long grain it doesn't really mater where it comes from. A lot of rice you find in the market that is used in Chinese cooking isn't necessarily grown in China.

:\ Looks like China produces 30% of the Rice, but most of that is for the country's consumption.

Chinese: Long grain white sometimes short grain white but I've never been to a Chinese place that used calrose (sometime referred to as sticky rice).

Japanese/Korean: Calrose sometime short grain white (which calrose technically is).

Short grain white is a safe all around rice for home use since it is sticky enough for Japanese/Korean style but loose enough to be similar to what you get at a Chinese restaurant.
