Anybody ever cook veggies into Sloppy Joes?

Cauliflower, broccoli, corn, french cut greenbeans, shredded carrots ....

If you cook that stuff in while the meat is browning, you don't even really know it's in the finished product. Well, except the corn.
 
Tried to bake Bánh mì bread but they came out too chewy. Anyone knows a good recipe I can use as reference?
 
This thread is going to turn me into one of those weirdos that takes pictures of their food.

I really enjoy weekday dinners because it sort of turns into a game of making something cheap, fast/low effort, and also healthy/nutritious.

Today I sauteed some mushrooms and spinach in a wok, then tossed in some pre-marinated black pepper chicken from the deli (cubed for maximum marinade to surface area coverage), then boiled up some Trader Joe's wavy noods till they were shy of al-dente (~2 minutes) and finished it all off in the wok so the noods soak up some of the marinade juices.

Splash of soy sauce and sesame oil over the top and you have a very tasty, clean, quick, nutritious meal for 4 (with enough for seconds) for all of $30.

$7.50 a plate, suck my balls and lick my asshole McDonalds with your $12 Quarter Pounders (that taste like they involve balls and assholes).
 
Today I am working on making a big pot of fettuccine Alfredo with sweet red peppers, crimini mushrooms, onions and some smoked sausage.
