What kind of fish do I use for sushi?

Depends on the sushi, but otherwise, go fresh fresh fresh

Check the spacing for the "rings" in the meet, the more spread apart they are, the older the fish

Tuna, yellowtail, swordfish, salmon are my favorites. If I could afford it, I'd live on those things(and die, as some of you would like to point out) 😀.
 
Yes, there is "sushi grade" meat. One of the small grocers here had some that cost about 4x as much as the fresh tuna in the regular seafood case. Of course, this is Wisconsin where we don't exactly have a lot of oceanfront property.
 
albacore sushi is soooo damn good..just melts in your mouth almost.. damn.. i want some.. regular tuna and salmon and yellowtail is real good too
