I would say "K-12 Teacher" but it's not on your list. At least the ones doing it by choice, and not as a last resort.

(ed) and Career Military (career as opposed to in it for the recruitment PR about job training / saving for college)

vet - respectable
prof - likely to join the "free speech for those that agree with me" bandwagon
dr - ripping you off
lawyer - ha!
engineer - less training and paid more than the vet

i think all jobs are equally respectable, and determining one is more respectable than the other is too subjective to be valid.

where's computer nerd? I mean, they get picked on by bullies when they're little, keep on coding. Take crap from the football team in high school, keep on coding. They take crap from their supervisor, keep coding. Then take crap from their bosses, keep on coding. Then they take crap from the venture capitalists, keep on coding. Take it from their wives, keep on coding. Take it from children, keep on coding. Take it from grandchildren, keep on coding. Takes it from the retirement home nurse, compiles and finally emails himself the fsck out of there :D

respect does not come immediately, you have to earn it. And since every rose has its thorns, every job will have its fair share of aholes.

But i think the most respectable job is a crime scene cleanupper

Because they build stuff that help people?

You should have used vet, to cover up your spelling abilities.
By the way this is a great topic to be generated by someone called RobDowneyJr. ;)

I admire medics, ambulance drivers and emergency room employees the most.

Maybe because 99% of the people here are engineers, and would rather not vote themselves as being as respectable as lawyers or Enron executives?

From that list I'd say vet, but I also know bad ones among that. I have 2 family members who are vets, and therefor I know quite a few, and know most are decent people, and unlike family physicians they need extensive knowledge on a lot of different subjects, as they cannot send an animal on to a specialist.

University professors are often very knowledgeable in their specific area, but a lot have no knowledge whatsoever outside that.

Family physicians are basically doctors with a little knowledge of a lot of medical subjects, opposed to doctors with a lot of knowledge of a specific subject.
A lot of them tend to focus too much on that little knowledge, and don't believe the patient may have more experience with their medical background to know when they should be send to a specialist instead. (If someone is passing out from reumatic pains you don't give them an ordinary pain killer (which the patient knew had not helped in the past) and tell them to call back after the weekend... the specialist freaked out when he heard that)

Lawyers? Hahahahaha...

Engineer? Just your average job, not more or less respectable than a 9-11 clerk.
