Usually spicy brown or some similar variant. But for hot dogs, yellow is the only way to go (mild like in the US or hot like elsewhere it doesn't matter).

I used some Chipotle mustard in some grilled chicken pilliard. Damn good stuff.

Depends what I am doing with it. Yellow to go with a sandwich, spicy brown to dip in, and HOT! yellow for egg rolls and such.
