Lamb, buffalo

Magnus, I can't get into rabbit. Always too tough for me, maybe I'm doing it wrong. Otherwise you're spot on.

Rabbit is easy to overcook. It has almost zero fat so bacon is it's best friend! :)

I think I'd have to go with Buffalo (Bison). Few things are as good as a charcoal-grilled Bison Burger, mm mm mm! :D

The only "exotic" meat I've had is Alligator, but it was made into sausage, so I can't really judge it.
Of the standard meats, I'd have to choose beef. Nothing beats a good medium rare steak.
Pork is second. So many choices: bacon, ribs, carnitas, carolina bbq.
Chicken needs the most help, but it's also the most versatile. I made some of the best jerk chicken wings a couple weeks ago.

Lamb is great. I like it a lot in India food (lamb vindaloo ftw). I enjoy venison and buffalo a lot too. There's a ton of variation in fish flavors as well. If you haven't tried them, salmon, swordfish, tuna steaks, and trout all have good and unique flavors.

Best bird I had was a pheasant. I also had a grouse but pheasant is much better, both were harvest during small game in PA. Best tasting meat I ever had was a bear. It was at a wildlife dinner. The best fish are walleye and crappies. Walleyes are mush easier to flay because they don't have the tail bones and you get less bones. Crappies have flakier meat and are more white in color. Meat is only as good as it is prepared. It takes time to get the right spices mixed into the meat to tenderize it. Also if you want smoked meat it can take a day to get the smokey taste. Damn this making me hungry. Go cook me some ribs woman!

Deer and Pheasant for sure.

I've had alligator a couple of times and thats always good.

Bison and Elk are really good. I also like Duck.

Of course good old Beef and Chicken are always a-ok too.

And lotsa fish and shellfish are good.

Duck > Lamb > Venison > Gammon = Beef / Steak > Chicken > Pork

Bacon is excluded from Pork / Gammon above; you can't beat bacon and egg sandwiches.

Seafood is awesome, pork is my favorite basic meat but I can't eat it every day (chicken I can). Lamb, venison and duck are all wonderful. I'm still planning to try bear, alligator and bison when I get a chance.
