I'm .5 Irish + .5 hispanic - but look totally white. it always freaked out people when they found out.

White, American.

From my family history: 1/4 Cuban (from what I know, my great-grandmother grew up on her uncle's sugar cane plantation outside Havana and met my great-grandfather, another Cuban immigrant, after coming to the US), 3/8 Italian, and the remainder a mix of being Irish and English.

American really is not an ethnicity. It is more a nationality. I mean I'm proud to be American, but I am Asian so yeah.

How do you half-white people identify? Usually it seems like a black/white person is black and an asian/white person is asian. The minority seems to overshadow the white.

And mixed race people? What does a black/asian put down?

I think this ethnicity question is getting stupid with interracial children becoming common.
