What is the white stuff in the indside of the orange callled?

Google is your friend. The peel (actual outside) is called the zest. I saw that Jay Kordich (The Juice Man) info-mercial thing and he said in there that that part of the orange is the best, filled with all sorts of good things. (Of course, he's a wacko... )
