What is the white stuff in bird poop?

Well I know that birds don't pee, and release their urine with their poop, I just don't remember what part of the poop it is 🙁
 
Well they do drop something liquid...

Since I know first hand since I got pooped on by a bird at my school...

I stunk, and it was only 1/3 of the way through school.
