What is the latest Intel Core i7 6700K stepping / revision?

That's the only one. What you do have is two different sSpec for Ci7 6700K, SR2BR which was the one initially released and didn't had SGX, and the later SR2L0 which does have it. I don't know if SGX presence (Regardless if its enabled on BIOS or not) can be Software detected. Plus I think that both versions also have the same SKU, so you can't differenciate from them unless you have the physical Processor to check the sSpec.

But do you know how much time will take until it gets any changes in revision and/or stepping and also do you know what's the difference between them (revision and stepping)?

I think, there were new series with SGX. These new models we can to know from box "S-SPEC" number
