Denmarks are a great value, have the larger sized cache and OC really well. But I suppose Toledo is the considered the best as thats what an FX-60 is.

Depends on these factors:

1) if you're overclocking or not (though the majority of the time the best core for overclocking is also the best core if not).

2) if you want single or dual core.

You're talking of single-core I presume?
Then the Venice. E3 stepping is presumed to be a little better O/C-er but had a little bug, so E6 is the current stepping.

Dual-core-wise Toledo and Denmark should be mor or less on par...

For single core, definitely Venice. It scales high and runs extremely cool and efficient.

For dual core, Toledo is highly regarded. Newer Manchesters are scaling pretty high as well.

Single core the best are Venice and San Diego. They both overclock equally well, with the San Diego simply having more L2 cache.

For dual core, Manchester is the equivalent of two Venices, and Toledo is the equivalent of two San Diegos.

You should be able to overclock rather well with any of these four cores.

Seconded on the Venice. My Venice (E6) is running nicely @ 2.7GHz, my old Winchester core stopped at 2.5GHz.

Dual Core i'd say Denmark but the new Manchesters do clock well.

My Venice 3000+ (1800) is running @ 2.4Ghz w/stock cooling. FSB is @ 265 Mhz x 9. I tried 275, but didn't boot. This is running a lot faster than stock 1800! It's cool to get your money's worth. I'd like to get a dual soon, but I'm not sure if it helps for games...
