I bought some at Sam's 'cause it was cheap and looked good. Anyone know what part of the pig this is from? I've never heard of the stuff before.

I don't usually have time to cook anything in the morning, so I'm waiting 'til the weekend to fry it up 😀
 
Haha - I just laughed too - it sounds like the 'pork sword' of 'cottaging'.

Maybe cottage bacon is from home-grown pigs?

Google hasn't any ideas.
 
It is leaner than regular bacon and made from the pork shoulder. It is cured the same way as regular bacon so it tastes the same without all the fat. Dunno... pork fat rules.
