What happens to all those coins that we throw into fountains?

Sometimes the management will try to kick you out for that.

Hehe, I kid you not. I forget which country it was in, but I noticed a bunch of bums keeping an eye out for tourists who'd try to get some coins out, rather than in.

And I do remember a bunch of places with notices that coin collection from the fountain is prohibited.
 
When I was a little kid I would float around the inner-tube loop at the nearby waterpark and collect all the loose change and bills people dropped into the water. The workers there really didn't like me...
 
I work midnight security at a mall (I just finished college) and the cleaning guys would steal the change from the fountains. Some got fired for doing this act.
