What does changing the voltage do?

I've read a few oc'ing guides and all it says about changing the voltage is it adds heat. How does this help overclocking? What are the pro's/con's to increasing cpu voltage?

Well, changing the voltage helps give your cpu a little more "JUICE!" when you overclock, helps the stability..

then.. changing the voltage adds heat.. and without the proper cooling could possibly fry your cpu if you go too high.. from what i know
