yea DUH cut carbs and you'll be healthy! Or was it trans fats? Or maybe saturated fats...sugar? I can never remember what the evil of the month in our diet is.

if it's a lettuce salad, i go for all the usual unhealthy suspects.

a real greek salad is not lettuce with "greek" dressing.
tomatoes
cucumbers
kalamata olives
chopped onion, maybe a clove or two of garlic
plenty of crumbled feta
salt, pepper, oregano
red wine vinegar
extra virgin olive oil
serve with some decent bread. most fresh "italian" or "french" loaves will do nicely.

don't add the vinegar until ready to serve. the tomatoes will spoil.

YUMMY!!

Lettuce + dressing works for me. I typically don't eat salads though because I need dense calories.

I wasn't going to respond to this because it really doesn't apply to me, but I just can't help myself. :eek:

Your average light vinaigrette runs about 50-70 calories per tablespoon. The heaviest dressings like Blue Cheese go like 120-130/TBSP.

On my full dinner plate salads I'll usually use about a tablespoon, but let's say I really soak this thing down with 3 tablespoons and I go from my vinaigrette to the aforementioned Blue Cheese.

The difference is like 300 calories. Is 300 calories a day the deal breaker between dieting and not dieting?


Now, if your going from one of my lighter salads to one with croûtons, tons of cheese, almonds (or any nut), and a non-lean meat then you could be talking about going from my 600 cal. diet salads to a 2000 cal. monstrosity.

I like going to the Byerly's salad bar and getting some spring greens and spinach and then tossing a bit of their pasta salad in there instead of dressing. Tastes great, nice and filling, without having to resort to eating pasta salad entirely by itself (which is pretty unhealthy).

I prefer honey Catalina dressing, some bacon bits, shredded cheese, carrots, hard boiled egg, blue cheese crumbles, croutons.

2 parts vinaigrette, e.g. Brianna's Blush wine Vinaigrette
1 part Jamaica Jerk, marinade sold @ a lot of stores & Trader Joes

mix 'em together, pour it over your greens.

will make you look like a professional chef. would make
earthworms taste good. wait, let me try that.
