build into flour tortillas with a slight base of refried beans, place in baking dish.
cover with enchillada sauce, cover in foil, oven at 30 minutes, 350, pack the burritos to fill the space and letting them get super happy in the sauce/moisture.
remove foil, top with cheese, continue baking for 15 minutes.

sounds like you'd need some kind of flotation device to maneuverer through all that liquid :p

And scrambled eggs,cheese,sausage,onions,more cheese and hot sauce make the perfect breakfast burrito.

Basic: Tortilla, refried beans, salsa, moz. cheese. Bake 7 minutes. Takes ~10 mintues total to make these.

Improved: Start with the basic and add any or all of these: sour cream, cheddar, hot peppers, tomatoes, enchilada sauce, or rice. Whatever you have lying around. Takes ~15 mintues to make.

Supreme:
1) Home made enchilada sauce. Basically chilli powder, fresh chilis, butter, and a little flour. Simmered until thick and creamy.
2) Home-made salsa: fresh garden vegetabes including tomatoes, onions, and roasted/peeled chili peppers. Add salt and garlic to taste.
3) Refried beans mixed with cheddar, moz. cheese, roasted/peeled chili peppers, some of the salsa, salt, and pepper then boiled until dense. Make more, as this will be used as a corn chip dip as well.
4) Basmatti rice cooked in butter and vegetable broth. No water.
5) Beef simmered in chili powder, garlic powder, onion powder, and cumin.
6) Home made guacomole (store bought stuff tastes awful and I thought I hated guacomole until I had home-made stuff). Peel a couple avacodos, add garlic and lemon juice, smash together with a fork.
7) Tortillas. I haven't tried making them myself, but I have been interested in trying.
