I made a burrito for myself for dinner tonight... just wondering what everyone else puts in theirs :) I threw in half a handful of cheese, a fork full of chicken, soylent green, spanish rice rice, chopped up tomato and some spicy hot salsa.

Sometimes I sub chopped tomatoes for the beans. I like the taco flavor season pack. You know, the one with the 60% of your daily sodium intake.

One problem I have is getting the cheese to melt and also getting the tortilla a perfect softness like the one Taco Bell.

I love burritos. :D

spidey burritos...

cooked ground beef (salt, pepper, some onion, garlic, favorite hot sauce).
saffron rice (cooked)
diced onion/green pepper
plenty shredded cheese
don't forget the salt (plenty), little bit of canned enchillada sauce.

build into flour tortillas with a slight base of refried beans, place in baking dish.
cover with enchillada sauce, cover in foil, oven at 30 minutes.
remove foil, top with cheese, continue baking for 15 minutes.

absolutely. But they are good.

A good burrito cannot be eaten without a fork. Just try it. 20 minute prep, 45 minute cook = goodness.

Rule #1:

Semi-crisp up the tortilla on HOT large flat pan
- - - -
Cheese: high quality cheddar such as NY Sharp or NY Extra Sharp

- - - -
On mine:

Assortment of stir fried veges
Shredded beef, stir fried with lots of chili powder
Thai hot sauce (Srirachi)
Rice, stir fried with onions and chorizo

Eat with large spoon until you can wrap.

I prepare stuff ahead of time and keep in fridge. I can prepare said burrito in < 10 minutes when the makin's are prepared ahead of time.

If you can't eat it with your hands then it isn't a burrito.

For a long time I would use a can (yech) of refried beans and green chilies which would be the basis for four burritos (those not cooked immediately to be frozen). I would use fre-fab whole wheat tortillas and add diced red or green bell pepper and common white onion (or Walla Walla sweet) and grated Jalepeno Monterey Jack cheese. They would be wrapped in foil to maintain softness of the tortilla. Usually I would serve tomatos and rice (most often Basmati or Jasmine pilaf, oddly enough for a Mexican dish) and occasionally salsa if I had made any previously.

More recently though, the refried beans have become unjustafiably expensive for what they are and sometimes I cannot be arsed with the preparation so a simpler and lower cost alternative is a can o' chili (vegetarian) with same Jack cheese thus only requiring heating rather than cooking (chili is heated then put on tortilla open-face, sprinkled with cheese and then heated for melting. Lettuce and tomato is then added before wrapping up.

Non-fat vegatarian refried beans, cheeses, jalapeños, onions, thick chunky picante, lots of Louisiana hot sauce, sour cream, non-fat yogurt, tomatoes, and black olives on huge flour tortilla. Fold, heat, eat.
I make 5 at a time (to use the whole can of beans).
