You might be able to get one in Chicago, if you can find an authenic southern restaurant there. Otherwise you'll have to go to New Orleans, Biloxi, Mobile, or some surrounding towns.

It's fried gulf oysters, mayo, cabbage, mayo, and pickles on po-boy bread. It's basically french bread, but they do *something* to it. Normal french bread isn't the same.

Hmm, well, I'm around collegetown, and I've heard of po-boy sandwiches, but not fried oyster . . . I know a friend who's from New Orleans, so I'll ask him next time I see him.

You could of course put anything on them, but it's usually as above. A lot of places put lettuce on instead of cabbage, but there are some places who use cabbage (IIRC it's more traditional). Some people eat them with french fries. I think it gives a unique texture to a sandwhich.

Yeah, it's not easy to find good po-boys outside of the Gulf Coast. Some guy started up a cajun restaurant here in Bedford, IN. I don't know what his definition of po-boy is, but I know where he got it from. He pulled it out of his ass.

Sounds good!

It's hard to mess up a sandwhich unless you put that 1000 island sandwich spread stuff or that not-quite-mayo crap on it.

Heh. No one can duplicate Southern food, unless they are a Southerner.

I wouldn't mind starting one, but Bedford isn't big enough to support it. Maybe Bloomington...

Hmmm......

Can you cook really good? My parents live about 2 hours from me, so I have to go to my grandparents to get GOOD Southern food. I can cook to some degree, but it is hit and miss. At least I try!

I can cook pretty well. I spent quite a bit of time with my mom in the kitchen in Mississippi. I'd open more of a sandwhich shop though. Bedford does have a really nice place called "Chuck's Soul Food" that is pretty damned authenic. The guy is from Lake Charles. His wife reminds me of Weezy and comes out sometimes with a big bowl of mashed potatoes and says "You wan' some mo' honey chile?" and puts them right on your plate.

I want to hug her.

;)

Well if you decide to move back down here to the South, we will have to meet up sometime and get some good Southern food and have a few beers.

Sounds like a plan.

It was really awesome. Had that in a Subway in Singapore :) I think tomatoes were also included.
